Bourbon Barrel-Aged Coconut, Raspberry, and Cacao Nib Stout • 13.5% ABV • This is an inter-dimensional showdown between our heralded #SpaceTrace BBA Coconut Stout and fan-favorite #JamTheRadar BBA Chocolate-Raspberry Truffle Stout.The beer tips off with an ACME bomb of coconut, cuts to a Filipino cacao nib breakaway, then finishes with an electrifying dunk of black and red raspberries.All references to the 1996 cinematic masterpiece aside, this concept sprang from a #WeekOfLogic fan cuvée back in 2017. We loved it then, and now five years later we're utterly blown away by the distinct moments of coconut, chocolate, and raspberry you'll find as the beer transitions from Space Trace to Jam the Radar on the palate.
Bourbon Barrel-Aged Churro Imperial Stout • 12.9% ABV • While we typically build our confectionary stouts with layers of semi-traditional adjuncts (graham crackers, roasted nuts, cacao nibs, fresh fruit) to accomplish our pastry purposes, we tapped the unique brilliance of the Odd by Nature team and went right to the source for this churro stout with the addition of more than 1,000 literal churros. Late churro additions to the kettle, debarrelling through a bed of churros, and further conditioning through a mini-brite tank stuffed with, you guessed it, more churros make for a ridiculous and utterly delightful dessert beer. Aromas of pure pastry, doughy richness on the palate, hints of toffee and chocolate on the finish, and sparkling with perfectly incorporated cinnamon throughout!
Bourbon Barrel-Aged Donut Imperial Stout • 12.8% ABV • Stroll right into a donut shop in our outrageous pastry collaboration with Odd By Nature! Finite Universe is soft and silky with all that glorious powdered sugar frosting sweetness right at the tip of the tongue and an unmistakeable mid-palate hit of the 600 giant cake donuts it was finished through. It all comes full circle (or full torus) with a bold roast to balance the palate with an almost-coffee-like bitterness.
Based loosely on the Smokestack Series’ The Sixth Glass, this abbey-style quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the “angel's share” of beer lost during barrel aging. Selected barrels are then blended for optimum flavor. The resulting beer retains only very subtle cherry characteristics, with toffee and vanilla notes coming to the fore. ABV:12.2
This brawny, tawny ale is a savory celebration of spicy rye malt and rye whiskey, compliments of extended aging in freshly-emptied rye barrels. Rye on Rye pours a deep amber and evokes notes of charred oak and vanilla, with a finish this delightfully boozy and sweet! ABV: 12.2
Over-the-top but surprisingly approachable, this twist on the classic style starts with several types of malted barley, rye, oats and wheat. Robust flavors of vanilla, espresso, whiskey, chocolate and roasted grain are balanced by hints of date and plum, with just enough hops to round it all out. Roughly one-third of the final blend is freshly brewed beer; the rest is aged for up to a year (or more!) in both first and second use whiskey casks. ABV:11.8

In 2010, we released the first-ever Bourbon County Stout variants and our Goose Island Bourbon County Coffee Stout has been a fan favorite ever since. For the first time since 2017, we brought back a coffee variant this year in partnership with our friends and neighbors Intelligentsia Coffee. Intelligentsia relies on Burundi for some of the cleanest, sweetest coffees in the world that ultimately complement the quality and tasting notes of Bourbon County Stout. The specific coffee blend combined with our Imperial Stout is called Turihamwe, which means “together”, and is a perfect tribute to all the hands that go into making it – from the female coffee farmers in Burundi that produced the blend, to our friends at Intelligentsia, the first brand we worked with on a variant back in 2010. The result of this “togetherness” is another exceptional coffee variant featuring rich chocolate, coffee, and caramel flavors that will appeal to coffee drinkers and beer lovers alike.
It’s been six years since we released one of the most celebrated Bourbon County Brand Stout variants. Today, we're excited to warmly welcome the return of this iconic member of the Bourbon County Brand Stout family. Vanilla, as an ingredient, has made an appearance in Bourbon County lineups over the years, but the 2024 Bourbon County Brand Vanilla Rye Stout is a new take on our 2014 Vanilla Rye release. This year’s release showcases rye and the complexity it delivers by starting with a rye imperial stout and aging it in freshly emptied rye whiskey barrels. After aging in barrels for a full year, the stout is then finished with incredibly aromatic madagascar vanilla beans. Bourbon County Vanilla Rye Stout has the beloved attributes of the vanilla variants before it–with a new characteristically rich spice character from aging in the rye whiskey barrels.
