The glorious ambrosia now before you is our 1500th batch of beer, hence the clever name. To celebrate this exciting brew house mile marker, we’ve crafted an exceptionally tasty dark Saison, meticulously dosed with dark candy sugar before fermentation in red wine barrels with Lomaland yeast, Lactobacillus, and four strains of Brettanomyces. We added a generous helping of black currants to this lot of Batch 1500, which combine with the existing notes of dark fruit, oak, and funky complexity to create a truly stunning ensemble.
A beer that's anything but conventional. Fermented for more than 18 months, The Dissident is a distinctive Oud Bruin, Flanders-style sour brown ale, with a fruity aroma and flavor & slight sour funkiness typical of this style.
Barrel Aged in 15-year-old single use Kentucky Bourbon Barrels. The roasted and chocolate malts complement the smooth oats to bring you a stout delight wrapped in the gentle embrace of Bourbon Barrel-aged warmth.
Boon Geuze Mariage Parfait consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 liters, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at a low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the “best before” date!
